Once upon a time a man dreamed of cooking a smoked brisket. So, he went to Costo and picked himself the nicest brisket he could find. Prime. He then went to Lowe's and got himself a pellet smoker. He was so excited. He called all of his friends and told them to come over the next day for a big BBQ. That night, he trimmed the meat and seasoned it. He gently laid the brisket in his fridge so that the seasoning could deeply penetrate the meat. The next day, he woke up early to start up his new grill. He put the meat in, ready for it to cook low and slow. Hours later, people started to arrive at the party. But the brisket was not ready. Some folks started getting agitated. They were hungry, and he told everyone not to eat beforehand. Finally, he took the brisket out of the grill and disappeared inside. Everyone was getting excited. But then he came back out with a tray and put it back in the smoker. He explained that a brisket actually has two different muscles. One is the flat, leaner meat. The other, the point, is fattier. He took that fatty meat and cut it into cubes and tossed them in sauce. That's what he put in the smoker, so that they could become burnt ends. People started groaning. They were hungry now. "Don't worry," he said. "I cut up the lean into slices that you can eat right now." His buddy took a slice and shoved it in his mouth. "You know, this is good, but I don't know if it was worth all that time and effort," he said after swallowing. The party host looked at him and said, "Don't worry..."
